Creamy chicken with crispy bacon and homemade pasta - serves 4
Ingredients
For the homemade pasta:
2 cups all-purpose flour
3 large eggs
½ tablespoon olive oil
½ teaspoon salt
For the pasta contents:
2 packs of bacon (+- 400g)
3 chicken breasts
200g mushrooms
olive oil
1 cup heavy cream
chicken spice
garlic & herb spice
salt
pepper
Making the pasta:
1. First, make sure you work on a clean surface.
2. Place your flour on the surface and make a little well in the middle.
3. Break your eggs and mix it with a fork in the middle of the well.
4. Add in your oil and salt and start mixing it, gently, with your hands. Continue bringing the dough together and then knead the dough. If the dough seems too dry to come together, wet your finger tips with water and continue kneading.
5. When the dough comes together nicely, form a ball and wrap it in cling wrap and let it rest for 30 minutes.
During this 30 minutes the pasta dough rests, prepare the pasta contents as instructed below.
6. Slice the ball of dough in quarters.
7. Flatten the dough balls with your finger tips or roll it with a rolling pin.
8. Run the dough through your pasta maker (Or alternatively roll it out to approximately 2-3mm thickness) , forming dough sheets. Be sure to sprinkle some flour between the sheets, once they stick together - it will be very difficult to separate them. Run the sheets from the thickest setting to the thinnest setting. Run your pasta sheets through the desired pasta cutter (Or cut your desired pasta shapes with a sharp knife).
9. Cook the pasta for 1 minute in boiling water with salt and oil.
Making the pasta contents:
1. Start by drizzling your pan with olive oil and cook your bacon until crispy. Remove the bacon from your pan. Chop your crispy bacon up to small pieces and set it aside.
2. Slice the chicken breasts up in small pieces and cook the chicken in the same pan.
3. Add the chopped mushrooms.
4. Add the garlic and herb spice to the chicken and cook until the mushrooms are cooked and the chicken is golden brown.
5. Add in the heavy cream, salt and pepper.
6. Add in the cooked pasta and let the flavours mix for 2-3 minutes.
7. Dish the chicken pasta into bowls and sprinkle the crispy bacon on top.
